Cold Lemon and Collagen Cheesecake

A light, no-bake version of the classic cheesecake, with a refreshing citrus touch and the power of Velven & Glow hydrolyzed collagen to care for your skin. Ingredients:

  • 150g natural Greek yogurt or light cream cheese
  • 1 scoop of Collagen
  • Zest and juice of 1/2 lemon
  • 1 teaspoon of honey or agave syrup (optional)
  • 1 sheet of neutral gelatin (or 1/2 tsp agar-agar)
  • 4 sugar-free whole wheat crackers (for the base)
  • 1 tsp coconut oil (to bind the base)

Preparation:

1. Crush the cookies and mix them with the coconut oil. Press the mixture into the bottom of two small glasses or molds.

2. Hydrate the gelatin and dissolve it in a little hot lemon juice.

3. Mix the yogurt with the collagen, lemon zest, and the remaining juice. Add the dissolved gelatin.

4. Sweeten to taste and pour the mixture over the base.

5. Refrigerate for at least 3 hours before serving. Garnish with a touch of lemon zest or a thin slice for a fresher finish.
