Cream of Asparagus and Lime Soup

Ingredients

  • 1 bunch of fresh green asparagus
  • 1 cup of vegetable broth
  • ½ small onion
  • 1 tablespoon of extra virgin olive oil
  • Juice of ½ lime
  • 1 teaspoon of Inositol
  • Sea salt and pepper to taste

Preparation:

  1. Wash and cut the asparagus, reserving the tips for decoration.
  2. In a pot, sauté the chopped onion with the olive oil.
  3. Add the chopped asparagus (except the tips) and sauté for 3 minutes.
  4. Add the vegetable broth, cover and cook for 10–12 minutes until the asparagus is tender.

  6. Blend everything until you get a creamy and homogeneous texture.
  7. Serve hot with the sautéed asparagus tips on top.
