Chia Seed Pudding with Coconut Milk and Inositol

Ingredients

  • 4 tablespoons of chia seeds
  • 250 ml of coconut milk
  • 1 teaspoon of Inositol
  • 1 teaspoon of agave or date syrup (optional)
  • ½ teaspoon vanilla extract
  • Optional topping: grated coconut, cinnamon or cocoa nibs

Preparation

  1. Mix all the liquid ingredients well in a bowl.
  2. Add the chia seeds and stir for 2 minutes.
  3. Refrigerate for at least 4 hours or overnight.
  4. Serve cold, decorated with toppings of your choice.
